Most sites have a mobile version, it's just hard to find sometimes. If a site doesn't autodetect your mobile browser then try replacing "www" with "m" or "mobile". Also, a google search for "mobile example.com" will usually get you there, if it exists.
My suggestion to site owners is to provide a link to the mobile version somewhere near the top of the site and stick to the "m" prefix if possible since it's easier to type. I shouldn't have to say this, but please make your urls linkable. Both MSN and Yahoo displayed their mobile url without it actually being hyperlinked, so I had to manually type it in. Spend a some design resources on your mobile site too. Just because it is mobile doesn't mean it has to be plain text-only. Don't name your mobile site "iphone.example.com". It's insulting *cough*facebook*cough*
